    Toasted Coconut Amaranth Porridge (Serves 2) 1/4 cup Unsweetened Coconut Flakes, 1/2 cup Organic Amaranth, 1-1/2 cups Water, pinch of Salt, 1/2 cup Coconut Milk, optional: Honey, toasted Almonds. Directions: toast coconut flakes until fragrant. Bring water to boil, add the amaranth and salt, reduce heat and cover for 20 min or until the water is absorbed.Remove from heat and stir in the coconut milk and toasted coconut flakes. If using, stir in honey and garnish with toasted slivered almonds.
