Mushroom Risotto - super yummy!! Wine perfect at cup. Fried shallots and mushrooms in oil before adding rice and drizzled more oil to coat before adding wine. 2 cups of low sodium chicken stock + water - could reduce water, turned out slightly soggy.
Spring Asparagus Risotto Creamy risotto, cooked with Spring asparagus, fresh herbs, Parmigiano-Reggiano and a touch of lemon. Perfect as a meatless main dish if you use vegetable broth, or wonderful as a side with grilled shrimp. SEL
Delish: Roased Cauliflower Risotto - made with chicken broth instead of vegetable broth. Also added chicken (and omitted the chickpeas because I forgot to get them from the store). This turned out great!
