SESAME CHICKEN SALAD. Salad: 4 slices of ginger; 1 medium onion; 3 boneless chicken breasts; 1 English cucumber; 2 large tomatoes; 6 green onions; 1⁄4 cup sesame oil ; salt and fresh ground pepper, to taste. Vinaigrette: 1⁄4 cup light soy sauce; 1 tbsp lemon juice ; 1 tbsp rice vinegar; 2 tsp sugar; 1 tsp whole peppercorns
Trying this out for dinner tonight (in my new cast iron dutch oven). Recipe calls for whole garlic cloves, cinn. stick, pint of milk and herbs. The flavors permiate better with the lid on for the first hr an then taking the lid off for the last hr. Moist, tender, favorful chicken!
