These are absolutely tasty and a regular dish in our house! Sweet potato pancakes, are oh so delish! My son loves them and the best part they are healthy. I usually will make up a huge batch and store the extra in the fridge or always have pureed sweet potato's in the fridge. Sweet potato's have a low GI (glycemic index) for those that like to know those little details. I know we are trying to eat better as a family.
