Pumpkin Rice Pudding...accidentally put too much rice in the pot one day, so I found this recipe to use up the excess. I used about twice the pumpkin and cinnamon but it's a wonderful dish and my husband loves it. (Does he know that pumpkin is a vegetable? Shh! Don't tell!)

I finally found another use for all the leftover white rice from chinese take out... Rice pudding that is delish!!! I only used 2 tbsp of sugar and could have used less, also used 1 cup of "So Delicious Vanilla Coconut Milk". Yum!!!
