Mexican Stuffed Peppers - These were awesome! But with a few edits. Instead of stuffing the peppers, chop half a yellow and half a red bell pepper. Decrease the cilantro to 1/3 cup loosely packed, increase the rice to 1.5 cups (I mixed white and brown). I used a reduced fat mex blend of cheese. It doesn't need sour cream.

This is probably the best Spaghetti I've ever had. It's great for "clean" eating and adding some veggies into your diet! Clean Eating Weeknight Spaghetti (Makes 8 servings) Ingredients 1 lbs. whole grain spaghetti noodles 1-1/2 lbs. lean, ground turkey meat 3 medium zucchini, grated 1 tbsp. garlic powder 1 tbsp. onion powder 1 tbsp olive oil 1 jar clean spaghetti sauce (or as much as you like) Directions Step 1 – Cook your pasta to package directions. Step 2 – While the pasta cooks, place turkey meat, zucchini, garlic powder, onion powder and olive oil into a large frying pan and cook until the meat is done. You are not using a lot of oil, so be sure to keep the heat at a lower setting. The water from the meat will help to cook everything. Step 3 – Drain your pasta and return to the pot. Step 4 – Stir in the meat and then the sauce.

Mix ingredients in bowl. Spray non-stick pan (must be non-stick) with ~1/4 tsp. olive oil, a very light mist. Pour scant ladles of 3 pancakes onto your pan and cook like a regular pancake. Spray with the last half of the oil, and ladle on your last 3 pancakes.
