From Krista - parmesan spinach quinoa - LOVE! Very good but I would add a lot more spinach next time. I also tried this with kale, but I prefer spinach. You can also add veggies - I added grape tomatoes and zucchini!

1 c quinoa, well rinsed 1 1/2 c water 2 c broccoli, chopped 1 c shredded cheddar S to taste Bring quinoa and broccoli to a boil over med heat, reduce to simmer covered until quinoa is tender, ~13-17 min. Mix in the cheese, let it melt and season with salt and pepper.

*PARMESAN GARLIC QUINOA (you'll never eat mac & cheese again! I used chicken broth for the water and cooked the quinoa separate from the onions and garlic this time. Also, only had grated parmesan/romano. Good by itself, just quinoa with cheese!

This is a good, healthy meal that crams in  a ridiculous amount of protein and fiber. This takes a little time since you have to cook the quinoa, sauté the peppers, onions and zucchini, mix it all together, and then bake for 40 mins; however, overall, this makes a great comfort meal that's a perfect way to incorporate a lot of nutritious ingredients. (Crispy Quinoa Bake 7pp for 1/8 of the pan) ekw

Crispy Quinoa Bake - I use all organic and I substitute veggie stock for the chicken stock and Almond pepper jack for the cheese and vegan it becomes. Enjoy it's delish!
