Grandma often doubled this recipe, because we all wanted a second helping. Grandma's Secret Trick When Grandma was in a hurry, she turned Luscious Lemon Delight into a layered pudding. She omitted the crust. She prepared the cream cheese layer, spooned it into a serving bowl or individual dessert dishes, then chilled it. She prepared the lemon layer and spooned it over the cream cheese layer. For a garnish, she crumbled almond macaroons or shortbread cookies over the top.

Luscious Lemon Dessert When I make this. I always double the cream cheese and confectioners sugar amount for that layer. It is "way" better... as if it could get any better.

Lemon-Blackberry Cheesecake This two-layer cheesecake looks cool and tastes better. It is nice to see the pure cheesecake layer above the berries, but if you’re in a rush you really don’t need to divide the batter; just add the purée and berries to the entire batter and omit that step.
