    Make cake time less of a hassel. I did this for my son's 4th birthday party and it was fantastic! The night or morning prior to the party; take ice cream out of the freezer and allow to soften on your kitchen counter for 8 to 15 minutes (time will vary slightly depending on type - ice cream/frozen yogurt/sherbert etc.) Line muffin tin with cupcake liners and scoop ice cream into the liners. Cover with plastic wrap and return to freezeer until party time!

Another pinner said: Kids birthday ice cream cupcakes! I just used store-bought tubs of icing(except I made the green), filled ziploc bags, cut the corner off, and piped on the icing. It works in a pinch! I used gumdrops instead of gum balls and used cookie icing for the "chocolate syrup" because it has that drippy look. These are so easy and cute!! Big hit!!
