Carrot ginger soup. Peel and dice the carrots. Roast at 425 degrees until just browned. Brown the onions and fresh grated ginger in olive oil/butter. Add stock and water. Boil together carrots, onions, stock, and water. Season. Reduce down to desired consistency. Add coconut milk and blend.
