    Papas a la Huancaina - Potatoes Huancaina style - Even if the name says this dish is from Huancayo, it was actually invented in Chosica, Lima, but by a señora from Huancayo. The dish consists of boiled and sliced yellow potatoes with a spicy sauce made of fresh white cheese, yellow Peruvian pepper (aji amarillo), milk, oil and salt. Papas a la Huancaina are served cold with a garnish of black olives, hardboiled egg and cooked corn (choclo).
