Pistachio muffins. Maggie's tweaks: I added a half teaspoon of almond extract to the mix, and instead of doing 3/4c finely chopped and 3/4c rough chopped, I finely ground more like 1 1/4c of the pistachio nuts. I'm not a huge fan of nut chunks in muffins, so I wanted most of the it to be ground down. I was shy of an oil based recipe, but these turned out good.
