      Will try this as muffin tops. Drop batter by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 7 to 9 minutes or until edges and tops begin to brown. Cool 1 minute before removing from cookie sheet.

      Pistachio Muffins. **I 86'd half the amount of sugar, substituted unsweetened applesauce for the oil and added, 1/2 cup of unsalted almonds, 1.5 tbsps of honey and 1/4 cup of craisins.**

      Pistachio muffins. Maggie's tweaks: I added a half teaspoon of almond extract to the mix, and instead of doing 3/4c finely chopped and 3/4c rough chopped, I finely ground more like 1 1/4c of the pistachio nuts. I'm not a huge fan of nut chunks in muffins, so I wanted most of the it to be ground down. I was shy of an oil based recipe, but these turned out good. Some fell in the middle a tish, but I wasn't super careful with the amount of flour I used...
