Maybe it's from my time living in Sweden w/ the heavy use of dill weed, but I loved that fresh element in this salad...only 1 tbs of Veganaise was needed for 4 servings worth of potatoes. I eliminated nutritional yeast.
Beetroot & Goats Cheese salad. Season fresh beetroot and sprinkle over olive oil and a little water. Bake in oven inside tinfoil for 40mins. Stir through goats' cheese and dress with yoghurt and chives. Serve with rye bread for a more substantial meal.
