Pot-au-Feu. My ever-calorie-conscious French women friends made this by chucking the vegetables in a dutch oven with chicken parts, pepper, a few bay leaves, thyme to cleanse the blood and not much else. Not even salt! Chopped fresh parsley can be sprinkled on each serving. The only really necessary accompaniment is mustard -- it has almost no calories.
Chicken Tikka Masala from Food & Wine. Tried this recipe a while back, still have it pinned because it was so good. Tastes very close to Tikka Masala I've enjoyed in restaurants. I grilled the chicken instead of broiling it and even threw in some paneer. It took a long time to make but yielded 3 days of leftovers for my husband and I. He has even asked for it again!
