Chicken Lasagna Rollups ~ Another hit! I cooked the chicken on the stovetop. When done, remove chicken from frying pan, melt about a tablespoon of butter and add 8oz sliced mushrooms. Cook mushrooms down, wilt some baby spinach over top, then combine with chicken and cheese mixture. Next time, I will add a little garlic to the frying pan too.
