    Scrambled Tofu. Serves 2, 246 calories per serve. 1 tbspn olive oil, 2 minced garlic cloves, 1/2 chopped red onion, 1/2 tsp ground turmeric, 1 tsp freshly grated ginger, 3 sliced collard green leaves, 225g firm tofu (drained, crumbled), salt and freshly ground pepper. Heat oil in a skillet. Cook garlic, onion, turmeric, ginger until tender, 3-4 minutes. Stir in greens + 2 tablespoons water. Cook til greens are bright green and tender, ~2 minutes. Add tofu. Stir. Heat ~2 minutes. Season.
