Wheat-free quinoa pancakes. I used ground flax instead of the rice flour, added a banana instead of the sugar, used coconut oil for the oil, almond milk (because we're almost out of regular milk), and processed it all in the blender so there'd be less quinoa crunch in the pancakes. They're different than normal pancakes, but we liked them.
