Coconut Muffins. 12 Tbsp. (1 1/2 sticks) unsalted butter 1 1/4 C flour 1 C rye flour 1/4 C coconut flour 1 C sugar 1/3 C shredded unsweetened coconut 1 T baking powder 1 1/2 tsp kosher salt 13.5 oz light coconut milk 4 egg whites Oven 350. Butter and flour a 12-muffin tin. In a large bowl, stir together flours, sugar, coconut, baking powder, and salt. In a medium bowl, whisk together melted butter, coconut milk, and egg whites. Gently fold butter mixture into flour mixture.

Vanilla Coconut Muffin  2 1/4 cups all purpose flour  2 tsp baking powder  1/2 tsp salt  1 cup sugar  2 cups shredded coconut (sweetened or unsweetened)  2 large eggs  1 cup milk (regular or coconut)  1 tbsp vanilla extract  5 tbsp butter, melted.  Took 28 minutes in my oven - they definitely weren't done @ 25 mins.
