(1 1/2 sticks) unsalted butter 1 1/4 C flour 1 C rye flour 1/4 C coconut flour 1 C sugar 1/3 C shredded unsweetened coconut 1 T baking powder 1 1/2 tsp kosher salt 13.5 oz light coconut milk 4 egg whites Oven 350. Butter and flour a 12-muffin tin. In a large bowl, stir together flours, sugar, coconut, baking powder, and salt. In a medium bowl, whisk together melted butter, coconut milk, and egg whites. Gently fold butter mixture into flour mixture.
