Why didn't I know this already? -- This link is actually for breakfast sandwiches (which you can freeze, who knew?!) but I also love the idea to cook eggs in muffin tins if you have a lot of people to feed and don't want to slave over a hot stove the whole time. Freezer egg McMuffin sandwiches for busy mornings: Lightly grease muffin tins + crack one egg in each well. Stick these in a 350 degree oven for about 15-20 minutes. Assemble: whole wheat English muffins + egg + cheese + Canadian bacon/ham/sausage, wrap and freeze

    Take a little less than a quarter cup of quick oats, 1 egg, a small handful of blueberries, and some Stevia, and mix it all up in a coffee mug. If you want your muffin a little moist a tablespoon of plain soymilk or almond milk will do it. Then place in the microwave for 1 min. Watch it carefully! This could overflow! Then crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes. Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!
