Custard Coconut Mochi. Now that I've made a lot of mochi recipes, I prefer those that use coconut and evaporated milk instead of fresh for a better, richer flavor and truer mochi texture. Those made with whole milk are too cakey for me. And not as custardy. But to each his own. This recipe is the tested best so far. Also use real vanilla beans and coconut extract.

Just made these for Dan, closest thing to diner pancakes we've ever had at home...Golden, Extra Fluffy Pancakes from Food.com: These are my absolute favorite 'plain' pancakes. I love these so much that I can't put anything on them lol... I just eat them dry... I have to be careful.. I like them so much I could eat the whole batch LOLOL .. ok.. maybe not THAT many! hehe
