      Healthy Meals Monday: Chicken and Black Bean Casserole Recipe | Six Sisters' Stuff I changed up the recipe a little: corn, black beans, green chiles, 2 large chicken breasts and fresh mushrooms. I also used one of those "rice sides" in "creamy chicken" flavored (cooked before combining) and 1 cup cheddar jack mixed in & 1 on top. Baked at 350 for 27 minutes.

      Healthy Meals Monday: Chicken and Black Bean Casserole Recipe | Six Sisters' Stuff. Made with red bell pepper instead of mushroom and quinoa instead of brown rice. Used a while onion. I would add more seasoning to the veggies next time. I put chopped green onions on top!

    Quinoa Black Bean Casserol- Added a little corn in between bean and quinoa layer and served with extra shredded cheese, salsa and greek yogurt!! Will be making again for sure!

    Dinner last night. This recipe is a keeper. And foolproof! We even got some of the instructions wrong and out of order, but I don't think there's any way to put these ingredients together in a way that doesn't taste great.
