Sweet Potato and Black Bean Quesadillas with Swiss Chard Pesto. Ingredients: 1 tortilla, cup shredded cheddar, cup chipotle roasted sweet potatoes, and chipotle black beans. Top with 1 tablespoon swiss chard pesto.
They are the best quesadilla I have ever had. I only used 1 avocado and I used canned corn but I added some fajita seasoning to it. Plus i was a little skimpy on the cheese. Love these avocado, black bean and roasted corn whole wheat quesadilla.
Chipotle Sweet Potato, Black Bean, and Guac Tacos. Next time cut the sweet potatoes a little smaller - they took way longer than 20 minutes to cook. Maybe cut back on the adobo a bit (used peppers). Paired with guac recipe from Clean Eating.
