Cherry Cream Cheese with Cresent rolls. Preheat to 350. Use 1 1/4 can of cresant rolls for bottom of candy cane-remaining 2/4 for stripes on top. Mix 1 (8oz) cream chese, 1/4 powdered sugar, 1 egg, 1/2 tsp vanilla. Spread over dough. Top with cherry pie filling. Arrange remaing dough in stripe pattern. Bake for 25-30 min till golden. For glaze 1/2 cup powdered sugar and 2-3 tsp milk.
Skinny Pumpkin Pasta Bake (1 lb dry pasta (penne or rotini work well), 2 T butter, 1 finely minced shallot, 1/2 t freshly grated nutmeg, 1 t thyme, 1 bunch kale: thick stems removed and leaves chopped into 1-inch pieces, 1 29oz can pumpkin puree (not pumpkin pie filling!), 1/4 C shredded parmesan, 1/4 C shredded sharp cheddar, 1/2 C lowfat milk, 1/4 C panko breadcrumbs, salt and pepper)
