Caramelized Onion & Goat Cheese Dip: - 1 Tbl olive oil - 1 medium onion, diced - 1 garlic clove, minced - salt & pepper, to taste - 1 cup sour cream - 4 oz. soft goat cheese - 1/4 cup finely chopped fresh chives 1. Heat oil over medium-low heat it starts to shimmer. Add onions & garlic, salt & pepper. Cook, stirring often, until onion caramelizes. 2. Stir together sour cream & goat cheese. Stir in the onions & garlic along with the chives. Cover & refrigerate 1 hour before serving.
