    The poached egg trick by Julia Child: Pricking the flat end of the egg with a needle and then cooking it in boiling water for about 20 seconds you will give a head start to the coagulation process (blood coagulates; protein, which is what eggs whites are made of, is denatured and turns it white instead of clear). After that you have to turn the heat down to a simmer and crack the egg into the water as normal.

9/25/13. Chickpea Curry. Really good. Roasted caul. until it was nicely browned. Added some veggie stock to the water and kale instead of spinach. Delicious over brown rice (didn't have basmati). Vegan loved it.
