Baked Cream Cheese Spaghetti Casserole. NEGATIVE: Can't think of one! POSITIVE: Yummy and easy! I made mine with 1/3 less fat Philly cream cheese and whole grain pasta, and it turned out great! Seemed a little dry before I even put it in the oven, so I baked it covered the whole time, and it was moist and delicious! Will definitely make again.

Make slices across the potato, being sure to stop before you reach its bottom. Cut up your butter (cold makes it easier) then shove in the potato. Then do the same with the Parmigiano-Reggiano. Next, open the potatoes’ crevices and shove the parmesan and butter, alternating between the two. Season with salt and pepper. Drizzle a little olive oil on top. Bake at 400 degrees for 45min. After backing, drizzle the heavy cream atop the potatoes and some shredded cheese and bake for 10 to 15 minutes.

Duchess Potatoes ~ recipe ~ Ree Drummond / The Pioneer Woman, Christmas dinner is the perfect time to make these, because they’re fancy & frilly & lovely while still having the yummy comfort-food factor of the mashed ones. Third, they go swimmingly with roast beef. And fourth, they’re chock full of egg yolks, which…well, there’s nothing more to say.
