Oven-Fried Eggplant 1/2 c FF Mayo 1T minced onion cut eggplant in 1/2 inch slices 1 C breadcrumbs 1 C grated Parmesan cheese 1 1/2 t dried Italian seasoning cooking spray or olive oil heat oven to 425 Combine mayo, onion spread over both sides. Mix breadcrumbs, cheese and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumb mixture. Place sliced eggplant on a baking sheet coated with cooking spray. Bake @ 425 for 12 min Turn over & bake 12 min or until golden.
