    Mini Caprese Salads! INGREDIENTS: 1 pint cherry tomatoes, red or yellow 1 bunch basil leaves 8 ounces fresh mozzarella cheese Balsamic vinegar, for drizzling 2-3 dozen long toothpicks/skewers DIRECTIONS: Slide a piece of mozzarella onto the toothpick. Fold a basil leaf in half or thirds and nestle it up next to the mozzarella. Slide a tomato onto the bottom of the skewer, cut side down. Drizzle lightly with balsamic vinegar and transfer to a platter to serve.

Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.

Good idea - many variations for this combination of vegies. Add variations of Italian dressings for added flavor - garden fresh tomatoes for best flavor!

When I make these, I don't cut the tomatoes in half and I buy the mini ball mozzarella to make it VERY easy. I use slightly longer skewers and put them in a martini glass rather than on a plate. Sooo cute and DELICIOUS!!!!
