Parmesan Zucchini and Corn - A healthy 10 minute side dish to dress up any meal. It's so simple yet full of flavor! I wasn't crazy about this - the final product was very soggy, and the textures of the corn and zucchini are too similar.
Baked Parmesan Tomatoes. Cut 2 large tomatoes into 3 slices. Mix ½ cup Parmesan cheese, grated 1 tsp dried oregano salt and pepper to taste in a small bowl. Top tomatoes evenly then drizzle with olive oil (optional) and bake at 400 degrees for approx min.
Made these tonight and they were so delicious. I would recommend broiling them though. The first batch we cooked the recommended 15 then broiled for 5 but the second we broiled for about 8 and the cheese was crispier. We mixed them into GF chicken Alfredo
