Biggest Loser Black Bean Burritos... We had these for dinner last night and they are really good, super easy and healthy too. Jon even really liked them and he's usually pretty anti-vegetarian. I highly recommend!
Parmesan tuna sandwiches: I tweaked the recipe... 3 cans tuna (drained), 2 bell peppers (mix up the colors!), 5 green onions, 1 c par. cheese, 3/4 c olive oil mayo, 4 tbsp sour cream, 2 tbsp lemon juice, 2 tbsp honey dijon mustard, salt & pepper to taste. DELISH!
