Pumpkin Pancakes - These are really good... Minimal amount of sugar so not too sweet. Recipe makes a lot so I freeze them in between sheets of wax paper in a large ziplock. They reheat very nicely (I microwave to thaw and then stick them in the toaster oven.) One of the most requested recipes in my house.
