When there is pineapple and coconut involved, you know it's good. These are my favorite. I originally got the recipe from foodnework.com but I made a few changes. NO BAKE - Cream Cheese, Coconut, Snowball's Recipe - In a small bowl, beat 1 8 oz pkg cream cheese & 1 can (8 oz) crushed pineapple, well drained until combined then fold in the 1 cup chopped pecans. Cover & refrigerate for 1 hour. Take out of refrigerator & roll into 1" balls; then roll in 3 cups coconut. Refrigerate for 4 hours or overnight. Yield: about 2 dozen.
