Oven-Fried Parmesan Zucchini Chips ~ Zucchini rounds coated in parmesan panko crumbs and baked to a crispy, golden brown. A healthy replacement for fries or onion rings.

Zucchuni crisps: - 1lb zucchini -1/4 cup panko bread crumbs -1/4 cup grated parmesan -1 tbsp olive oil -1/4 tsp salt  Toss sliced zucchini in olive oil to coat.  Toss in breadcrumb/cheese;salt mixture to coat.  Place rin foil on baking sheet and spray with cooking spray.  Place single layer of sliced, coated zucchuni on baking sheet.  Sprinkle wirh remaining breadcrumb/cheese.  Bake at 400*F for 22-25 minutes
