    MAC N CHEESE WITH SPINACH MUFFINS:: ~~Ingredients~~: 4 c cooked whole wheat or high fiber macaroni 1 T butter 1 T flour 1 c skim milk 1 garlic clove, minced 3 oz sharp cheddar cheese, shredded 3 oz Gruyere cheese, shredded 1 egg 1 egg white 1 (10 oz) package of frozen chopped spinach, defrosted, drained and patted dry (or you could use 1 cup cooked fresh spinach) Salt & pepper to taste ~~Directions~~: 1. Pre-heat the oven to 400. Lightly mist a 12-cup muffin tin with cooking spray and set aside. 2. In a small sauce pot, melt the butter over medium heat. Add the flour, mixing it into the butter until thick. Stir in the milk and garlic and raise the temp to bring the mixture to just under a boil. Add the cheese and whisk mixture together until thoroughly combined into a cheese sauce. 3. Remove the cheese sauce from heat and then mix in the egg and egg white (binding agents) until combined. 4. In a large bowl, combine the pasta, spinach, cheese sauce, salt and pepper and mix together. Spoon the mixture evenly into the cups of your prepared muffin tin. 5. Bake for 10-15 minutes until the tops slightly brown. Let cool 5 minutes before removing from muffin tin. Yields 12 muffins. Broccoli Cheese Rice Casserole. This dish was a REQUIREMENT (still is) at the Thanksgiving table. Ive often wondered how I could possibly replace all that yummy cream of mushroom soup and Cheese Whiz with real food to make it more healthy and I cant wait to try this recipe before T-Day arrives this year.

    This was very good. I cooked the broccoli in a cup of homemade chicken broth, used the broth instead of 1 cup of the milk and added onions and shredded chicken for a perfect dinner.

These are a great idea for a party. Which is what I should have made them for. Because the recipe makes A LOT. And they are so rich and cheesy that even the hungriest of men can eat two max. Unfortunately, I made them out of the blue for my roommate and I and ended up shoving them at people at school to EAT THEM. Side note: they are a bit buttery/oily, so be sure to have napkins nearby.

One Pan Taco Macaroni and Cheese. I used rotisserie chicken instead of beef. Excellent. This recipe makes a ton....I need to cut it in half next time.

    Tastes pretty good, but be sure to spray the inside of the cup with Pam first. Otherwise, it's a mess to try to wash.

    I tried this. It sucked. The noodles WOULDNT cook, the cheese stuck together I had to throw it out without eating any
