*Swiss Chard & Onion Frittata: this was a surprising hit with my vegetable hating kids. I used coconut oil instead of olive oil. I don't have an oven safe frying pan so I just put everything into a greased Pyrex and baked it at 350 for 15 min.
Sweet Potato and Black Bean Quesadillas with Swiss Chard Pesto...this was really good. I didn't have any pesto thawed so left it out and just used filling for tacos. I used the homemade taco seasoning on sweet potatoes and left out chili powder.
