This Short Rib Wellington Potpie from Williams-Sonoma is one of my family's favorites when the weather gets cool. I usually make the "stew" in a large dutch oven, then divide it among Le Creuset's individual serving mini cocotte pots which I then top with the puff pastry. I find it is easier to work with the puff pastry that way and it is fun for everyone to have his/her own Wellington.
