*** Pistachio Crusted Rack of Lamb -- I made this & it was AWESOME! I used ground mustard instead of dijon, added extra olive oil, rosemary, & thyme to the pistachio mixture, and seasoned the lamb very generously. Seared it on each side for about a minute then threw it in the oven for about 30 minutes.
Roast Leg of Lamb Provencal : This roast reflects the typical recipes in France or Spain where garlic and other herbs grow wild and are used frequently. The lamb marinates for a few hours in a typical marinade - but it will only need about 1-1/2 hrs to roast. Seasoned to perfection the lamb is basted in melted butter and soya sauce.
