Broccoli and Cheddar Soup 1. Sautee 1/2 a yellow onion in a large saucepan with salt and pepper. 2. Add 2 cups veg broth, 2 cups water, chopped broccoli florets (1 head), chopped russet potato (1), salt and pepper and bring to a boil. Cook for 20-30 min. 3. Blend ingredients. Then reheat with 2 tablespoons of sour cream and 1 1/2 cups of cheddar cheese.
