Caprese Skewers ~1 pint cherry tomatoes 1 bunch basil leaves 8oz fresh mozzarella cheese Balsamic vinegar, for drizzling 2-3 dozen long toothpicks/skewers ~Slice tomatoes in half. Slice mozzarella in chunks. Slide mozzarella on toothpick. Fold basil leaf in half or thirds,nestle next to mozzarella. Slide tomato on bottom of skewer, Drizzle lightly w/vinegar.
Creamy Caprese Quinoa Bake- this was AMAZING- I'd highly recommend it! We didn't have much parmesan so I just threw in a couple different types of cheese we did have in the fridge, including bocconcini which left yummy little pockets of cheese. I'm VERY excited for lunch leftovers tomorrow!
