Toss cubed chicken in curry powder. Sautée in peanut oil. Remove chicken and add broccoli florets, minced garlic and ginger. Stir in coconut milk and curry paste. Add chicken back to pan along with cornstarch in cold water. Heat through for a few minutes then cool slightly. Serve over rice. Yum!

tomato chickpea & coconut soup: Easy and delicious comfort food, I followed the recipe to a T except that I did not blend anything (I like chunky soups), did not add water, forgot the chili flakes and used 1 tsp of dried thyme. I used parmesan and coconut milk. I paired it with the balsamic-dijon grilled cheese that was suggested. It's in my rotation now! I love my Campbell tomato soup but this feels and tastes richer and fancier ;)
