When I was 8 years old, my family up and moved from nowheresville, Indiana to Ft. Myers, Florida on a whim my father had to become a shrimper. He bought a big ole' shrimp boat, hired a small crew, and started bringing home shrimp by the bagful. I wanted nothing to do with it. Especially after seeing my mom pull the poop-line out of a slew of them! I preferred Hamburger Helper. After a few years on the water, my father lost his desire to troll the sea for shrimp and we moved back to the midwest. Of course, now that I have to pay $10 a pound for it, I've developed a much greater appreciation for the tiny crustacean, and every recipe I try it in tastes better than the last one. Amazingly enough, my picky kid even likes the little wigglers, so shrimp is a regular on my monthly menu. I also like that shrimp cooks in practically no time at all, so even the most complicated shrimp recipes still only take a few minutes. This recipe makes a whole lot of a really great sauce, so I recommend either doubling up on the shrimp or making a batch of pasta to toss with the extra sauce. Or you could just drink it. Yeah. Shrimp Scampi link to original recipe Cook Time: 10 min. serves 6 2 lbs shrimp, peeled and deveined 1 tablespoon pure olive oil 2 tablespoons garlic, minced 1 1/2 cups white wine 1/2 fresh lemon, juice only 1 teaspoon Italian seasoning 1/2 cup softened butter 1 tablespoon parsley 1/2 cup grated Parmesan cheese 8 oz. cooked pasta, if desired Heat cast iron skillet and add olive oil. Add shrimp and cook until tender and no longer translucent, reduce heat. Remove shrimp and set aside. Add garlic and cook 2-3 minutes. Do not allow garlic to brown - it will make it bitter. Add white wine and lemon juice. Cook until wine is reduced by half. After it is reduced, add Italian seasoning. Reduce heat to low and add butter. If pan is too hot, the butter will separate. Add shrimp back into sauce, add parsley, and season to taste with salt and pepper. Sprinkle with grated Parmesan cheese. Garlic Salt (to taste) For 1 cup Heavy Cream Substitute: 1 Tablespoon Flour 1/3 Cup Butter 3/4 Cups Lowfat milk (if you want to use whole milk, cut out the flour- though I can’t vouch for how well that will turn out since I haven’t tried it.) Recipe: 1. Prepare your meat/seafood choice. Salt and Pepper it and cook in a bit of olive oil on the stove until fully cooked. Set aside on a plate while you prepare the sauce. 2. Prepare your heavy cream substitute. Melt 1/3 cup butter (on the stove or in the microwave works), pour in 3/4 cups milk and 1 tablespoon flour. Mix well. 3. In a medium saucepan, melt the 3 tbsp butter in a medium saucepan with the olive oil, over medium-low 4. Add garlic, your 1 cup cream plus your mixed substitute, pepper, and parsley and bring to a simmer. Stir a lot, but not continuously 5. Once it’s simmering, add parmesan cheese and simmer for 8-10 mins.. until it is thick and smooth. Again, stir often 6. While this is going on, boil your pasta to your preferred taste. 7. After the 8-10 mins, add mozzarella and your meat/seafood to the saucepan and stir constantly until it is smooth. 8. Sprinkle with a little bit of garlic salt, to taste. Be wary, this sauce separates easily because of all the butter, so you need to keep stirring it. If you let it sit long enough after you’ve eaten, it will separate, but it’s still good as leftovers, just a different texture. If you prefer to make it the original way, be my guest and use 2 cups heavy cream. I tried this the second time I made it (I actually messed up and didn’t have enough cream the first time I made it and that’s why I used a substitute) and it didn’t come out the same as the first time. It really wasn’t nearly as good. I think all of the butter is key, and it’s what it made it taste just like Olive Gardens. EDIT: Made it a third time tonight and confirmed that the 1 cup heavy cream substitute makes the dish. I decided it needs more garlic, and edited accordingly. Recently, with crabby two year old filled days and a husband in the police academy five days a week, the idea of going out and letting someone cook me dinner couldn't be farther from reality. However, I found out through talking to a friend that one of my favorite restaurants, Olive Garden, posts many of their recipes on their website. So atleast I can get the taste of a restaurant meal. Last night, I decided to try my favorite recipe of theirs, Stuffed Chicken Marsala. It turned out AMAZING and had TONS of flavor! I altered the recipe slightly and absolutely loved it! Here's what I did: WHAT YOU NEED: *2 lbs. boneless skinless chicken breasts *4 fl. oz. olive oil *2c flour For the Stuffing: *1/2c smoked gouda cheese *8oz. package mozzarella cheese, shredded *1/4c Parmesan cheese *1/2c Italian seasoned breadcrumbs *1 tsp. fresh garlic, minced *1/4 tsp. red pepper flakes, crushed *2 tbsp. sun-dried tomato flakes (drained if in oil) *1/3c green onions, thinly sliced *3/4c sour cream (6oz.) *1/2 tsp. salt *1/2 tsp. black pepper For the Sauce: *1 small onion, thinly sliced *10oz. Marsala wine *8oz. heavy cream *2 small containers button mushrooms, thinly sliced (6 cups) *S&P to taste *1 tbsp. parsley WHAT YOU DO: Pre-heat your oven to 350*F. Combine all cheese stuffing ingredients in mixing bowl. Then butterfly chicken breasts and pound thin. Place flattened chicken breasts on a plate and place desired amount of cheese filling on chicken, flattening it down so it resembles a hockey puck. Fold other half of chicken over filling. Heat large skillet over medium heat and add oil, heat until oil is shimmering. Place flour in bowl, and dredge each chicken breast. Place chicken into skillet and brown on both sides. Remove chicken and place into baking dish. Bake for 15-20 minutes, making sure chicken is cooked all the way through. Meanwhile, add onions to skillet and stir to loosen chicken drippings. After about two minutes, add mushrooms and saute until onions are translucent. Deglaze pan with wine, making sure to incorporate the drippins from bottom of pan. Heat wine to a simmer and add heavy cream. Simmer on low heat until reduced by half. Place cooked chicken on a plate and top each with sauce. Serve with mashed potatoes.

'Bang Bang Shrimp' Source: Adapted from Cinnamon Spice and Everything Nice Ingredients 1/2 cup mayonnaise 1/3 cup sweet chili sauce 1 teaspoon rice vinegar Breading: 1 1/4 cup all-purpose flour; divided 2 eggs, beaten 1/4 cup milk 1/2 cup panko breadcrumbs 1 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon rubbed sage 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon dried basil oil for deep frying 16 to 18 medium shrimp, peeled and deveined Directions 1. In a small bowl whisk the sauce ingredients together. Cover and refrigerate. 2. Add 1/2 cup flour to a shallow bowl. In a separate shallow bowl whisk the eggs and milk together. 3. In a large zip-lock bag combine the remaining flour, panko, salt, pepper and all the spices. 4. One at a time coat the shrimp with the flour then dip in the egg allowing excess to drip off. Drop each shrimp into the breading bag and shake until completely coated. Remove from the bag and set a large plate in one layer. Refrigerate 20 minutes. 5. Heat 1 - 2 inches of oil in a large deep skillet. Fry the shrimp in batches for 3 to 4 minutes or until golden brown. Drain on a wire rack or paper-towel lined plate. 6. The first time, I followed the recipe exactly and it turned out nicely,but I felt it needed a bit more of something.The second time, I nailed it.I doubled all of the shredded cheeses as well as the salt and pepper.It was sooooooo good!Gonna make again for Christmas.
