1 14 oz can Mushrooms
1 Onion
1 19 oz can Tomatoes

Pasta & Grains

3/4 cup Converted rice

Baking & Spices

2 tsp Chili powder
1/4 tsp Pepper, ground
1 Red pepper, large
1/4 tsp Salt

Oils & Vinegars

1 tsp Vegetable oil

Nuts & Seeds

2 tsp Cumin


1 cup Cheddar cheese, low-fat

So I went here, no recipes! Ugh, found the recipes, checked them out and culled the list to the ones that might just rock. Enchilada Pasta: really? Not in my casa mi amigo!

chicken and rice casserole. Yummy! (I didn't use canned cream of chicken, I used the recipe it calls for which was great!) For the seasoning of choice I used ranch dressing mix. I kept the foil on the entire time instead of taking it off halfway through. We all really liked this one. :)

4 sweet potatoes 2 oz of low fat cream cheese 1 can of black beans 1 can of corn 1/4 cup pepper jack shredded cheese jalapeno slices crushed red chili pepper flakes and whatever other seasoning you want makes 4 servings...315 calories my new favorite dinner!
