Roasted Veggie Quinoa Salad. This was Ah-mazing!!! I used zucchini, yellow squash, broccoli, cauliflower, yellow pepper, and red onion. I only used a portion of the oil and it had plenty. I didn't have a fennel bulb so I left it out and it was still super yummy. This is totally going to be a regular at our house. SO, yummy!
