Homemade pesto: 1 bunch of basil 2 garlic cloves 1/2 cup olive oil 1/4 cup pine nuts salt and pepper to taste Combine the basil, pine nuts and garlic in a food processor and pulse until coarsely chopped. Add the oil and process until well combined. Season with salt and pepper to taste. Note: If you don’t have pine nuts, almonds, hazelnut or walnuts work great.
Classic Pesto Place 4 cups loosely packed basil leaves, 1/2 cup grated Parmesan cheese, 2 garlic cloves, halved, 1/4 tsp. salt in a food processor; cover and pulse until chopped. Add 1/2 cup toasted pine nuts; cover and process until blended. While processing, gradually add 1/2 cup olive oil in a steady stream.
