Apple Bacon Coleslaw. I made this as a side dish for our Mother's Day cookout. I followed the recipe except that I used 2 large apples instead of 4. Everyone loved it and I even sent left-overs home with people. Unless you are serving a dozen people like I did, you may want to cut the recipe in half.
Salted Paleo: Avocado Chicken Salad (scd, paleo) 1 Pkg boneless, skinless chicken breasts (2 or 3) 1 avocado 1/4 of an onion, chopped juice of 1/2 a lime 2 Tbsp cilantro (or sub basil if you prefer) some salt and pepper, to taste Cook chicken breast until done, let cool, and then shred. Add all of the other ingredients and mix.
Chicken Pot Pie Cupcakes- love this idea! In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices. Place biscuits into each muffin tin, pressing into the bottom and up the sides. Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Easy and delish!
