I made these for brunch today and they were delish! *Substituted hashbrowns with veggies for plain because they were out of plain.

I made these for brunch today and they were delish! *Substituted hashbrowns with veggies for plain because they were out of plain.

Chicken/Broccoli Casserole - 3 chicken breasts cooked, shredded, 2 cans cream of chick. soup, 1 cup mayo, 1 cup shredded monterrey jack cheese, 1 bag frozen broccoli (thawed & chopped).  Mix together & transfer to a greased 2 qt. casserole & cook @ 375 about 30 minutes.

Baked Cheddar-Broccoli Rice Cups (I would sub light or fat-free mayo or ranch dressing for the full fat ranch).  Use brown rice.
