Roasted Veggie Quinoa Salad. This was Ah-mazing!!! I used zucchini, yellow squash, broccoli, cauliflower, yellow pepper, and red onion. I only used a portion of the oil and it had plenty. I didn't have a fennel bulb so I left it out and it was still super yummy. This is totally going to be a regular at our house. SO, yummy!
Chickpea and Tomato Salad with fresh Basil...made this today, while good found it was a little bland, so pulled out my trusty and often used book The Flavor Bible and found that all of the ingredients used work with chickpeas, but cumin,coriander,red pepper flakes and black olives also work, added 1/4 tsp cumin and 1/4 coriander and a 1/2 cup sliced black olives and Viola !!
