Homemade Granola Bars

Vegetarian • Makes 18-20

Produce

1/2 cup Blueberries, dried
1/2 cup Cherries, dried
1 cup Dried fruit

Breakfast Foods

3 cups Rolled oats, lightly toasted

Condiments

1/3 cup Honey
2/3 cup Maple syrup

Baking & Spices

2 1/2 tbsp Brown sugar, light
1/2 cup Wheat germ

Oils & Vinegars

1/2 cup Coconut oil

Nuts & Seeds

1 cup Almonds, lightly toasted
1 tbsp Chia seeds
3/4 cup Coconut flakes, sweetened lightly toasted
2 tbsp Flax seeds
1/2 cup Walnuts, lightly toasted

I make a batch of these every week for breakfast :) I sub applesauce for the oil and dried apples for the fruit :) delicious!

Granola Bars Melt 2 tablespoons butter in a saucepan with 1/3 cup each honey and brown sugar, and a pinch of salt. Mix in 2 cups rolled oats, 1 cup each chopped nuts and dried fruit, and 2 tablespoons wheat germ. Press into a parchment-lined 8-inch-square pan and bake 30 minutes at 300 degrees F. Cool, then cut into bars.

Homemade granola, I also added 1/2 c wheat germ, used pure maple syrup, raisins, dates, almonds and walnuts. Very good! Can't wait to try over homemade vanilla ice cream or with my overnight oatmeal.

Chocolate granola bars. Word has it these taste like No Bake cookies, but without the CRAZY amount of sugar (these are sweetened with honey).
