It's just store bought fondant, but I've made it before in the past. Either one works fine, but it's messy to make.

I always make marshmallow fondant homemade. How thin do you roll it and do you cut it on a mat?

I roll it about 1/8 in. thick and I like to roll it out on a large wood butcher block that has been sprayed with Pam. I have also rolled it out on a very clean counter top before (that way your surface is not moving around while you're trying to roll the fondant).

Do you lay it directly on the cutting mat or put wax/ parchment paper under it before putting it on the mat?

Directly on, just spray liberally with Pam.
