Slow Cooker Jambalaya -- 1 lb. skinless, boneless chicken breast, cut into small pieces; 1 lb. andouille sausage, sliced; 1 28oz. can diced tomatoes with juice; 1 large onion, chopped; 1 large green bell pepper, chopped; 1 c. chopped celery; 1 c. chicken broth; 2 t. dried oregano; 2 t. dried parsley; 2 t. Cajun seasoning; 1 t. cayenne pepper 1/2 t. dried thyme; 1 c. instant rice -- Place all ingredients except rice in slow cooker. Cook on low for 7-8 hours, or on high for 3-4 hours. Slow Cooker Jambalaya | Plain Chicken - This was SO easy to make. I mixed everything up in the crockpot insert the night before and threw it in the fridge. I put the insert in the crockpot before I left for work and dinner was ready when I got home.
